My 3G[S] is currently jailbroken on 3.0.1. I don't have any signed files however I have saved the ecid in a text file. 2 questions:
    1. Can I get signed files in any way or in cydia?
    2. Does the fact I have the ECID number in a text file make me any safer?

as far as I know, saurik doesn't allow you to upload your own ECID (would be way to unsafe I think).
I don't think the saved ECID will help you anything, but who knows for sure?
It IS possible to make your own fake-server which would allow you to use the ECID you have on your computer, but please don't ask me how google might be your friend if you are really trying to do this. I read it's not even very complicated

If anyone finds a way of creating a fake server please post the link/details here as I require this too!

    Many Thanks.

So does this mean I will never be able to jailbreak any other firmware than 3.0 ever again? If it does uh oh I need unlock!!!. So my unlock will be more safe if I don't upgrade even if the phone gets corrupt?

If you are currently running 3.0 or 3.0.1 and have a successful jailbreak and or unlock then at this stage you needn't do anything. When the 3.1 jailbreak update is available then you will be able to upgrade your phone and still benefit from jailbreak and unlock. If you upgrade your phone now to 3.1 through iTunes you will lose that ability so just wait. Once you have the jailbreak for 3.1 installed you will be able to send your ECID through Cydia to Sauriks server and therefore benefit from future updates.

Essentially just sit tight for a few days/week until the jailbreak update is available and you'll be fine.

If you want to obtain your 3.1 ecid shsh files for when a 3.1 pure jb comes out you can try The Firmware Umbrella

But your 3.1 ecid shsh files are only of limited use to you if you are already jailbroken.

You will be able to store 3.1 ECID SHSH. The window for 3.0 ECID SHSH closed a while ago.

Is it necessary to have ECID SHSH on file even if you have a regular iPhone 3G? I am planning to buy one from a friend and would like o know if I would be able to restore it to 3.0? Your feedback will be much appreciated.

You will still need the files stored. There is, however, a jailbreak solution available for the iPhone 3G and 3.1 software, so you may not need to restore to 3.0.

No, you do not need the ECID SHSH for the 3G, only 3GS (and iPod Touch Third Generation).

You could downgrade it if you really wanted to, but I don't see the point as 3.1 has already been Jailbroken on the 3G and works fine.

iGuru - Apologies if I'm wrong. Does that mean the 3G phone isn't verified by Apple when restoring through iTunes, therefore meaning you can use the Alt+restore method?

Correct. Alt + Restore on Mac (as you are) Or Shift + Restore for Windows users.
