I'm trying to wrap my head around all this. I've always thought of myself as somewhat technically inclined, but now, I'm not so sure. It's been asked, I'm sure, a million times in a million manners, but I'd like to be sure that there's nothing I can do at this point but wait for the 4.0 jailbreak.

    Iphone: 3GS
    Version: 4.0 (8A293)
    Model: MC136LL
    Firmware: 05.13.04

When I got it, it was 3.1.3. I jailbroke it with spirit. Saved my ssh on cydia then unlocked it for t-mobile with redsnow (I think, everythings going fuzzy over time).

For some reason, the phone wasn't showing up in iTunes, so I upgraded to iTunes 9.2.

It showed up, and told me to upgrade the phone to 4.0. Like most people, I didn't think and I did it.

    Obviously a big mistake.

Now here I am, like everyone else, wondering what to do.

Can I downgrade in order to jailbrake, in order to unlock via ______?

I should also state that I'm on a mac.

Yes , you can downgrade to 3.1.3 ipsw if you have the 3.1.3 shsh file saved by Cydia. Point your hosts file to cydia, put your Iphone into Recovery and do the shift and restore. Obviously , you will encounter error 1015, but you can use tools like irecovery to get out of this loop.
It is not going to be easy to get out of this error because of Itunes 9.2, but it can be done.
Once you are at 3.1.3, then do your jailbreak and unlock again.

Has there been any step by step guides to do all this? "It's not going to be easy" doesn't put my mind at ease.

How do you point your file to cydia?

Is there a guide for mac? And for 3.1.3? Or will downgrading to 3.1.2 work for me?

There is no harm trying, since you are already at official 4.0.
It is just the time involved doing all these downgrading, if you can't, worst come to worst, just restore back to 4.0

There are two diffuculties you will encounter but it is a challenged.
First is to downgrade, if successful but ended up error 1015.
Secondly, you have to get out of this error, Itunes 9.2 seems to be crashing the tools used to get out of this recovery loop.
If you succeed the two barriers, then you are good to go and jailbreak and unlock again.

Ok, so I have the firmaware for 3.1.2 & 3.1.3. I need to restore via iTunes, and it'll give me some error right? How do I point it to the firmware?

Just found this: Restore iPhone 3GS to 3.1.2 Using SHSHs on File with Cydia | OS X

    Should I follow these steps?

Ok, I've successfully downgraded to 3.1.3. Should I use Spirit to jailbreak, or something else?

So, it's not ok to use Spirit with iTunes 9.2, which is what I have. Should I use a different jailbreaking program then? And which program to unlock?

Since you have 3.1.2 shsh, why don't you downgrade to 3.1.2 and jailbreak with Blackra1n or Redsn0w.
If you have the new bootrom, then it will be tethered jailbreak which you do not want, then you have to use spirit jailbreak to get untethered jailbreak but you have to downgrade Itunes 9.2 first before applying Spirit.
If you have the old bootrom , great , jailbreak with Blackra1n or Redsn0w. If you want to jailbreak 4.0, you can restore to custom firmware of 4.0.
