This is how I put custom carrier logos on my phone.
SSH custom carrier logos to /private/var/mobile/Library/Carrier Bundle/T-mobile_us.bundle
as I am using T-Mobile. I guess if you changed images with your existing carrier bundle it would work.

you have to put your stuff in
    /System/Library/Carrier Bundles/Unknown.bundle

in there, edit the carrier.plist (you can google how if you are on windows).
    in there, you will find:
    above that, paste
now, all you have to do is edit <string>Mobistar</string> into <string>YOURCARRIER</string>, whereas YOURCARRIER is the name the iphone displays in the statusbar when you put in your simcard. Name your carrier logo
Default_CARRIER_Monaco.png (grey statusbar, when an app is open)
FSO_CARRIER_Monaco.png (black statusbar on your homescreen or lockscreen).
and copy them into the Unknown.bundle folder

save the carrier.plist, reboot, done. and believe me, it sounds much more complicated than it is.
