The 2G iPod touch comes with 2.1.1 firmware and as far as I know (have been doing research HIGH & LOW) it cannot be jailbroken yet.

I was wondering though, is it possible to downgrade the firmware to 2.1 or 2.0?

No, you can't downgrade on the 2nd generation iPod Touch, just like you can't go below 2.0 on the iPhone 3G. It's because of the iPod's booting system that it can't be jailbroken yet (different than the 1st generation, so it'll take some time to get worked out).

If you want a fully automatic process for windows users, this is the one "SetupQuickTether2." I used this with no problems. Just google it....... QuickTether Beta Released - Boot, Jailbreak your iPod Touch 2nd Gen with Custom Boot Logo! | AllTechRelated
I did it on my MAC in virtual environment, XP with Parallel desktop.
Vista is a little bit harder, and you cannot do this on a 64bit Vista only 32bit.

If you do not have the possibility to do it in XP then you have to run "libusb-win32-filter-bin-0.1.12.1" in XP compatibility mode in vista or you can screw up you PC and you have to restore.
If you want it, get it, no matter the risk, y only live once, and gadgets are replaceable.....
