    I though that my shsh blobs worked exclusively with my own device, but you're saying it is a general file?

    Not a general file. They do work exclusively with your device. The first time you ran cydia you basically told cydia to try and save your shsh for you when possible (little trick the creator of cydia put in to make it easier for people to restore). So if you see 5.1.1 SHSH at the top of the page in cydia that means cydia's server saved those 5.1.1 SHSH for you and stored them online in cydia's server.

    All shsh are a kind of certificate, a certificate allowing you to restore your device to a certain firmware. Normally only Apple issues these certificates, and normally only for the latest publicly available firmware. But then there is the jailbreak world. Some devices you can extract this certificate from the device itself for the firmware that is on the device. Cydia can save your shsh automatically for you requesting this certificate from Apple and storing it for later use. That is what happened for you with 5.1.1. When 5.1.1 was the latest firmware cydia requested your 5.1.1 shsh for your device from Apple, and then stored it for you so that you could use it later and restore to 5.1.1 even after Apple has stopped issuing 5.1.1 SHSH. So now redsnow (or tiny umbrella) can request these 5.1.1 SHSH from cydia's online server whenever you want.

    So let me go over the steps again and just correct me if I'm wrong:

    1 - Go to itunes and backup on 4.2.8
    2 - Upgrade to 6.0.1 still in itunes
    3 - after the upgrade close itunes and open redsnow and stitch my shsh file to a 5.1.1 firmware file
    Now, when do I put my device in pwned DFU mode?
    How do I restore to the 5.1.1 firmware redsnow created?
    How do I get all my apps and everything else back to my device?

    4- Still in redsnow choose the option to enter pwned DFU
    5- Open iTunes, hold down shift/alt (windows/mac) and click restore.
    6- A window will open, point itunes to your 5.1.1 stitched firmware you created
    7- iTunes will restore you to 5.1.1
    8- Activate phone normally in itunes but don't choose to restore from backup or setup as new yet
    9- Close iTunes and use redsnow to jailbreak and put cydia back on your phone.
    10- Once up and running with your jailbreak then open itunes again and choose the option to restore your backup that you did when you were on 4.2.8 and let iTunes do its thing and put all your stuff back on.

    So I won't restore back to 5.1.1 through redsnow? I thought itunes wasn't signing 5.1.1 anymore

    That's why you stitch your 5.1.1 shsh into the firmware, iTunes won't go looking for it, it's already in the firmware. Redsnow does have its own restore feature now but I don't really trust it unless it is needed (like with a 4S which doesn't accept stitched firmware).
