    With Installer app on my phone SFTP via Cyberduck, how do you go about changing the names of the apps? Thanks in advance.

    Applications names are store here, in this file:
    /System/Library/CoreServices/SpringBoard.app/English.lproj/LocalizedApplicationNames.strings

    It's an XML file and it you add the .plist extension you can edit it in your favorite plist editor.

    Might just be me, but I only see the original apps in there. Where would the names be to change for 3rd party apps?

    You need to add manually for the 3rd party apps. some are already added on this file if you want.The other thread
    The App name goes in between (string)(/string).
    You can find (key)(key) on info.plist in each Apps folder or under App name in Installer.
