Unless someone has ridiculously fast internet speeds (I only have 10MB dsl connection), there is a very long buffer time when using Airplay to stream videos from the iPhone.

Is there a tweak out there which allows choosing different quality levels?

AirPlay doesn't rely on your Internet connection speed. It has all to do with your wifi speed. Do you have a wireless N router and is it close to (I assume) your Apple TV?

Its wired to my HTPC... but about 20ft from my living room. So maybe that's it. Ill try with my phone setting right next to it.

However the video quality of iPhone recordings is pretty diesel... A few minutes of footage is a GB or more; larger than most full-length movies on my HTPC. If airplay streaming happens to be lossless, then Im sure that would be the primary issue.

Ya, I'd say its the 20ft distance causing you issues. I have all of my setup in the same room about 10ft at most from each other and AirPlay performs very well.
