I'm new to this and have a question:

Is there a way to backup my cydia installed apps, etc in order to restore after I update to 3.0.1?

I would like to avoid having to download and install all over again.

    Thanks.

PkgBackup is $2 and I hear that it works really well. I prefer the, free, AptBackup but that can be more difficult to use for people who don't really enjoy or know how to SSH.

Pkgbackup is well worth the $2.49 +0.25 if you use PayPal

    What about something like iPhoneBrowser?

I can already see files/structure in my phone...can I use that to copy my apps, then put them back after I've updated and jailbroke again?

I think that you would have to SSH the .debs into the phone not the entire app. I haven't tried that method before so I don't know what would happen.

Like NeoNightmareX says - not a good idea. Installing packages does not just copy files to your phone.

You know I'm always right - even when I'm wrong

    Reading about AptBackup, it says:

"You cannot restore a backup "whenever". It is only for restoring a backup after a fresh iTunes installation."

Does that mean installing iTunes all over again?

No, after a fresh iTunes restore.
