I have an iPhone 3GS (old boot-om) that was just updated to 5.0.1 and with the iPad baseband unlocked. I used redsn0w to create a custom IPSW to reinstall 5.0.1 because I had some reception issues that I wanted to see if they could be fixed.

After I went through the steps and Pwned DFU to restore via iTunes and carefully choosing the "NO_BB" firmware, the iPhone boots but is unable to recognize the SIM or activate through iTunes, because I have a T-Mobile SIM. What gives? Did I lose the baseband? I made sure I used the right firmware when restoring with iTunes, so it should have kept the baseband and then allowed me to proceed with jail breaking.

Even if I somehow wrote over the jailbreak, can I hactivate and flash the iPad baseband again?

You should not hactivate it either by way of snowbreeze or redsn0w, use an official sim to trigger it and install Ultrasn0w to unlock it.
